Recipe: Pork Ribs, Grill Stars Style

Getting ready to get that grill out, and want to try something new? Here's a recipe from the experts of a gourmet food truck that suggests adding a little Jack Daniels.

The team behind Grill Stars, a Fremont-based gourmet food truck that has brought to-die-for treats to Newark and Union City, was kind enough to share their favorite BBQ recipe for Independence Day.

This one is all about the ribs.

So here's that rib recipe straight from Pat Clarke of Grill Stars:

What You'll Need:

  • Pork ribs (spare or baby back)
  • Paprika
  • Celery Salt
  • Onion Powder
  • Garlic Powder
  • Cracked Black Pepper
  • Cayenne Papper

How to cook it:

  • Wash your pork ribs.
  • Afterward, pat them dry with a paper towel and then rub this blend into the ribs:
    • 1/4 cup paprika
    • 2 table spoon celery salt
    • 2 table spoons onion powder
    • 2 table spoons garlic powder
    • 2 table spoons cracked black pepper
    • One table spoon Cayenne pepper.
  • Then on your grill at home build the fire as far away from the meat as you can (keeping the charcoal inside the grill, of course!)
  • Place your ribs bone side down. Don't rush your ribs.  Allow them time to cook.  Keep the temp around 200 Farenheit, so the smoke flavor can penetrate the pork. Using soaked wood (apple, oak, mesquite) will help the smoke. 
  • Add a little Jack Daniels to your water, if your feeling gracious and soak the wood over night. SMOKE your ribs untill the bone is sticking out from the meat (like the meat tightens and more of the bone will show) then your ribs are done! 
  • Serve dry with BBQ sauce on the side.
